Melon and Mango Salsa
Ingredients
- Cantaloupe Melon
- 1 Mango
- 1/2 Red Onion
- 1 teaspoon of finely chopped red & green chilli
- 2 - 3 tablespoons olive oil
- 1 Lime
Method
- Half a ripe Cantaloupe melon scoop, out the seeds then peel, dice and put into a bowl.
- Slice a ripe mango down each side of the flat stone, peel and dice the flesh adding it to the melon.
- Finely chop 1/2 a red onion and add a teaspoon each of finely chopped red and green chilli.
- Toss 2 - 3 tablespoons olive oil and the grated zest and juice of 1 lime.
To Serve
season to taste and serve with the sea bass.
