As with all our game, this fillet of larder trimmed superior wild Highland Red Deer for 4 people.
Simple to prepare: season, sear all sides in a hot pan then pop in a hot oven for 12 mins rare/15-18mins medium then rest for 10 mins and serve with a red wine reduction, mashed potatoes and some seasonal veg. This king of game is healthy, low in cholesterol, lean and has a superb flavour.
