Roast Smoked Salmon with Winter Coleslaw
Ingredients

200g Roast Smoked Salmon
-
Finely sliced Red Cabbage
-
Finely sliced ripe pear
-
Finely sliced White Cabbage
-
two handfuls of chopped hazelnuts
-
two handfuls of plump raisins

Plain Natural Yoghurt
-
Olive Oil
-
Lemon Juice & grated rind

Caraway Seeds
Directions
Mix together equal quantities of white and red cabbage
Toss in one finely sliced pear, chopped hazelnuts and raisins
Make up dressing by whisking 4tbls yoghurt with 2tbls olive oil, 2tbls lemon juice
Mix in 2tsp finely grated rind and half a tsp of caraway seeds
Toss dressing through salad
Divide salad between two and arrange flaked roast smoked salmon ontop of salad, pour some of the dressing over the salmon pieces
