Fabulous Scottish lamb that has grazed on a mixture of heather and grass. Stud the meat with a mix of garlic, chopped rosemary and Ortiz anchovy fillets, roast in a hot oven and serve with mint sauce, red currant jelly and seasonal veg. Add the juices from the meat as it rests to your gravy.
