Roast pork with crackling is always a Sunday lunch winner. Rub a little olive oil on the skin, season it and place the meat on a bed of chopped carrots, onions and apple. Roast at a high heat - 230íc - for 20 minutes then reduce the heat to 180 and cook for 1hr 20 minutes. Check the crackling has cracked and if not, turn the heat up again and check it every 5 minutes.
