Description
Meat from the Iberian pig is minced roughly and mixed with garlic, spices and Pimentůn de La Vera before being stuffed into natural casing to make the chorizo sausage and then hung for a couple of months to mature. The smoky flavour of the Pimentůn mixed with the spice and the meat makes for a beautiful, unctuous and rich flavour. Always serve it at room temperature and savour the way it almost melts in the mouth.
