Description
We marinate whole fillets of salmon in whisky before gently smoking in our inimitable way - over oak logs in our brick kilns for between 36 and 72 hours. The combination of whisky, fish and oak smoke results in an unusual and individual flavour. Not overpowering, it is delicious accompanied by a peaty malt whisky and some oatcakes.
