Smoked Trout on Avocado & Horseradish Sourdough Toast

Smoked Trout on Avocado & Horseradish Sourdough Toast

Ingredients

  • Inverawe Smoked Trout slices
  • 3 Ripe Avocado
  • Sourdough, Wholewheat or Pumpernickel Baguette /small loaf
  • Extra Virgin Olive Oil
  • 1 Lemon
  • Fresh Horseradish
  • Creme Fraiche (optional)

Method

  1. Cut the avocados in half, remove the stone and scoop out the flesh into a bowl.
  2. Mash the avocado until roughly smooth and season with lemon juice, salt and pepper.
  3. Slice the baguette into pieces of a decent thickness.
  4. Toast slices of the bread under the grill or in a griddle pan, and brush the top of each slice with a little Extra Virgin Olive Oil.
  5. Spread some of the mashed avocado over the toasts and top with nicely folded slices of smoked trout.
  6. Finely grate some fresh horseradish over the top. Alternatively, make a horseradish cream by mixing some grated root and creme fraiche, tasting as you go to get a good horseradish flavour, and spoon a little of this mix over the top slice of smoked trout.
