I love this salad, the basil, tomato and onion exploding with flavour.
Ingredients

2 ripe tomatoes

Basil leafs
-
Toasted pine nuts (optional)

1 Red Onion Sliced
-
tomato purée (or finely chopped sun-dried tomatoes in oil)

2 tsp balsamic vinegar
-
4 tbls olive oil
-
1 tbls sun-dried tomato purée (or finely chopped sun-dried tomatoes in oil)

pinch sugar
-
salt and freshly ground black pepper
Tomato and Balsamic Vinegar Dressing
Directions
Slice 2 ripe tomatoes and arrange next to the sliced chicken wIth a few thinly sliced red onion rings.
Tomato and Balsamic Vinegar Dressing
Whisk together 4 tbls olive oil, 1 tbls sun-dried tomato purée (or finely chopped sun-dried tomatoes in oil), 2 tsp balsamic vinegar, pinch sugar, salt and freshly ground black pepper.
Spoon the Tomato and Balsamic Dressing over the sliced chicken, tomatoes and onion rings.
