Healthy Summer Salads

Three great Salad Recipes for the summer. The best thing is that they are all so easy and instant to prepare, they look wonderful, taste delicious and are good for you. You have to give them a go.

Smoked Duck Salad with Rocket & Mango

  • equal quantities of, Papaya, Mango and Kiwi Fruit
  • Rocket
  • Pumpkin Seeds
  • 112g Smoked Duck (serves 2)

Lime Dressing

  • 2tbls Sunflower Oil
  • Light Soya Sauce
  • 1-2 tbls Lime Juice & grated rind of 1 lime
  • 1tsp Honey
  • Salt and Black Pepper

Method

Whisk up the dressing and toss through the fruit and the rocket leaves gently. Serve with the sliced smoked duck.

Mediterranean Roast Salmon Salad

  • equal quantities of, Mini Cherry Tomatoes, Black & Green Olives, Sundried Tomatoes and Chopped Garlic
  • Romaine Lettuce
  • Basil Leaves & Spring Onions
  • 200g Flaked Roast Smoked Salmon (serves 2)

Method

Toss all the ingredients, including the flaked roast smoked salmon together with your favourite french dressing and serve.

Smoked Ham with Mozzarella & Peaches

  • equal quantities of, sliced peaches, halved black grapes and diced Mozzarella
  • Rocket
  • 112g Smoked Ham (serves 2)

Dijon Dressing

  • 4tbls Olive Oil
  • Light Soya Sauce
  • 1-2 tbls Lemon Juice
  • 1tsp Dijon Mustard
  • Salt and Black Pepper

Method

Make up the salad on individual plates, placing the Mozzarella and Ham beautifully. Then drizzle with the dressing.
