Melon & Mango Salsa

Melon and Mango Salsa

Ingredients

  • Cantaloupe Melon
  • 1 Mango
  • 1/2 Red Onion
  • 1 teaspoon of finely chopped red & green chilli
  • 2 - 3 tablespoons olive oil
  • 1 Lime

Method

  1. Half a ripe Cantaloupe melon scoop, out the seeds then peel, dice and put into a bowl.
  2. Slice a ripe mango down each side of the flat stone, peel and dice the flesh adding it to the melon.
  3. Finely chop 1/2 a red onion and add a teaspoon each of finely chopped red and green chilli.
  4. Toss 2 - 3 tablespoons olive oil and the grated zest and juice of 1 lime.

To Serve

season to taste and serve with the sea bass.
